You know what I love as much as the season of sun, flowers in bloom and long warm summer evenings? Summertime FOOD. With all of the fresh produce in season and readily available, I just can’t get enough of the flavors of summer. This recipe in particular incorporates so many fresh veggies that not only does it look good and taste good, but it make you feel awesome too. It’s simple, clean, wholesome and oh so delish.
Street Corn Soft Tacos Recipe
- 4 ears of sweet corn
- ¼ cup plain Greek yogurt (look for organic)*
- Juice from 1 lime
- ¼ teaspoon chili powder
- Salt and pepper
- ¼ cup cilantro
- 2 tablespoons Parmesan cheese, grated
- 8 small whole wheat tortillas
- 1 cup shredded lettuce (look for organic)*
- 1 tomato, chopped (look for organic)*
- 1 avocado, peeled, seeded and chopped
- Lime wedges for garnish

Place ears of corn on a grill over medium heat and char on all sides, cooking for 5 minutes or so total. When done, kernels should be golden brown and slightly charred in places.
In a bowl, combine yogurt, lime juice, chili powder, salt and pepper and cilantro. Cut the
corn from the cobs once they have slightly cooled and add the kernels to the yogurt mixture. Stir to combine.
To build a taco, add a heaping spoonful of the street corn filling into a tortilla and top with shredded lettuce, chopped tomato, avocado and a sprinkle of Parmesan cheese. Squeeze on a lime wedge for additional flavor.

Not only can kids help make this dish, but they can learn more about their food!
Let kids contribute to this recipe by putting them in charge of stirring together the yogurt mixture with the corn. They’ll also love building their own tacos. With all of the fresh ingredients in this recipe, encourage them to make theirs as colorful as possible.
